Tonight’s freezer meal swap

So tonight I loaded up my Cheesy Chilada Bakes and headed to the church to swap my meals. We had 27 ladies participating today, and we were divided into 3 groups of 9. We then exchanged freezer meals. Here are the yummy meals I ended up with (I apologize for the yellow lighting – I'm still learning how to take a decent picture!):

My meals include: honey glazed chicken, teriyaki chicken, mozzerella meatballs, broccoli chicken bake, chicken fajitas, black bean & vegetable chili, chicken parmasan, and chicken curry. Plus, the cheesy chilada bake from earlier (which was very yummy, by the way!). While this is a lot of chicken meals, I'm glad since you might remember all the steak and beef dinners I made last month. The yellow piece of paper (which is understandably hard to find in this rather yellow picture) lists cooking instructions for each meal. There are also some freezer cookies the church graciously gave us!

Getting all these dinners did require some of my "Master Cramming" skills. But I did it. I just have to remember to be careful opening the freezer door unless I want to get my foot slammed with a falling beef chuck roast. Here's my freezer as of tonight:

What do you think? Don't you think that looks WAY more interesting that just lots of frozen chicken breast and meat? These are actual prepared dinners using fresh, real ingredients! It's inspiring to look in there and choose a dinner for the next evening.
 
All the recipes we made tonight came from Fix, Freeze, Feast: I know a number of you have gotten into freezer cooking as a result of these posts. In the not-too-distant future, I'll be picking the brains of my friends Kellie and Becca who have graciously organized these swaps for the past four months. Thanks so much for inviting me tonight, I loved it. Jay is really excited about the meals and admitted to wanting to dive into the Chicken Curry already, haha!

I think I’ve already recruited my friend for the swap as long as she has the night off, can’t wait until next month!

I totally know what you mean about the curry!! I was already full from dinner and the cookies, but the smell of that curry is oh-so-heavenly!

I think freezer meal swaps are THE BEST!!

I feel like I just got my 15 minutes of fame with my teriyaki chicken pictured on your blog. LOL! Can’t wait to eat your cheesy chilada bake. I love that one. Yummers!!! But, seriously, the best part about the freezer meals is that you get REAL food with REAL ingredients. I think I got all of mine for about $23!

Keri, you are TOO funny! You know, I want this blog to be bigger than me and just what I’m doing. This is why I’m ALWAYS pressing folks to share pictures of their shopping trips and testimonials with me…or email me with what they’re doing. I seriously LOVE featuring what other people are doing. More so than my own stuff. If you want another “15 minutes of fame” consider emailing me a pic of a recent trip, or anything else you think would be of interest. Everyone else reading this…this applies to you too!

I would love to do some freezer cooking but I have heard that some recipes in the fix, and freeze book are not very flavorful. I like my food to have lots of flavor and seasoning. Do you find the recipes you have tried are flavorful and yummy?

As with any cookbook, there are winners and losers. I think this cookbook DEFINITELY has more winners!! Some of my favorites (that have great flavors!) include the sweet & sour meatballs, mango cranberry chicken, and curry chicken. The cheese steak is also unbelievable. Other readers – what are your fav recipes from this book? ONes you didn’t like so well?

How do you figure out the cost for each person? Does everyone shop for their own ingredients, makes meals and just gets an equal number of meals in return??

Stacy, yes – I just made the Cheesy Chilada Bakes last month – I think I made 9-10 of them, then swapped them for other meals. I calculate cost per meal by total I spent on my meals to make.
