I just finished a very satisfying meal. Satisfying because it was delicious, yes, but also because I had grown it myself!
Just look at these beautiful organic salad greens and spinach!
These are the kind that I often find packaged for about $4-5 at the stores…and I’ll be enjoying them all summer long! My parents are also fans of making green smoothies, so I’ll be pleased to help them cut costs on quality produce, too.
To celebrate the occasion, I enjoyed one of those Tandoor Indian cuisine meals. I recently shared how they were offering free coupons for their product (sorry, that offer is no longer available!). I have to say…I’m totally hooked on their Kofta Curry! It’s also vegan, so if you’re looking for some tasty new options, you might give it a try! The spice was perfect with my plate full of greens.
I’m also pleased to share that I got my son to eat some raw spinach! (OK, so maybe it was like one leaf…but hey!) He tried putting on a brave face while he was eating it, but I could tell he was on the fence. So I said, “way to go…you helped me plant those spinach seeds and now we get to enjoy it!” That seemed to perk him up and he finished his leaf. It’s a start, right?
I can’t wait to see what we’ll be enjoying next from our garden.

looks yummy! We can get Olivia to eat salads as long as there is Ranch on it…but we totally lose the battle with corn and tomatoes
Thankfully this anti-veggie thing is not unique and we all can share ways we’ve gained victory in the veggie vs. toddler battle (even veggie vs. adult too!) Enjoy your yummy garden and have fun thinking of new salad concoctions.
Gotta love fresh grown salad! Last year we put in our first garden, and that really helped my oldest (then 5) try more and eat more vegetables. Normally she hates anything green, so I about fainted when she asked if she could go outside and pick her own salad for dinner.
