This is a great book! I bought it last winter (after one of your posts!) I used the Zaycon chicken I bought and made so many yummy make-ahead meals! I make meals often for my father-in-law and deliver them when we visit monthly.
I’m hoping to do some meal swapping this fall to prepare for those busy school nights.

Angela,
Are these recipes healthy? I am trying to get away from the”processed” and geneticly modified foods and eat more organic, natural REAL foods. The list of recipes sound great… Almost too good to be true.

I would consider most of them healthy yes. And of course, you could always opt for organic options where possible. There is also a section for making your own sauces (such as red sauce) and marinades from scratch as well as a vegetarian section to the cookbook.

As a couple examples: the ingredient list for Mango-Cranberry chicken (chicken, dried mango, dried cranberries, mango chutney – I buy at Trader Joe’s, rice vinegar, minced onion, garlic, sesame oil, and curry powder). Cashew Chicken (chicken, soy sauce, red wine, minced garlic, red pepper flakes, cashews – and then you cook with fresh veggies & sesame oil.) For the soy sauce in the Cashew chicken, you could easily swap out with Bragg’s Liquid Amino, etc.

I’d personally consider that healthy, but I know that’s a subjective term. Anything more I can clarify, let me know. I own the cookbook and am sitting here with it! ;)
