Do you ever have one of those “aha!” moments and it’s an awesome “aha” moment because it’s just so easy? That’s how I felt a few weeks ago when I decided to just cut up a bunch of fruit and put it out on the counter while I cooked up dinner. That way my little hungries had something to nibble on that wasn’t a pre-dinner no-no.
Last week I put together one of these platters and it was full of different colors and I began to ask my kids for input – “hey, we need some green – any ideas? How about something red?” Out of this I had an idea of creating St. Patricks Day Rainbow Fruit Platter! It seems that holidays often give us a reason to eat lots of not-so-good for us stuff, so maybe it’s time we change that!
So recently, I packed up my daughter and we hit up the Fred Meyer Produce Department for some color inspiration….
Red = raspberries, strawberries, red apples, watermelon
Orange = oranges, kumquat, mango, melon
Yellow = lemons, starfruit, pineapple, banana
Green = kiwi, honeydew melon
Blue = blueberries
Purple = blackberries, red grapes
I also made a simple dip using greek yogurt + raw honey + sprinkles (just cuz!) and then added them as “clouds” for the end of the rainbow. I also included some gold chocolate coins for the “gold at the end of the rainbow effect.” For this, you could have each child earn their gold treat by successfully “eating the rainbow” or you could simply wrap some other treat of your choice in gold foil if you’d prefer to omit the chocolate.

About 20 minutes later, the platter was almost entirely devoured! I’d say my work is done!
