Also, the Trix yogurt deal rolled for me today, however it only print one $1.50 Catalina. Still works out to $0.88 per 4-pack of Trix, which isn’t a bad deal in my book.

Have you ever seen these at WinCo Foods before? Look for them in the refrigerated section, where they sell the cheese and deli meat. They make an excellent pizza crust and are only $1.48 each! They also sell pizza sauce right there, too.

Think you can’t afford nice ingredients such as pine nuts? Don’t forget bulk foods, baby!! I bought just the amount I needed for a recipe this week in bulk at WinCo for $1.04! If you want more bulk foods inspiration, don’t forget you can go back and read the series I did on bulk foods in October last year. OH! And I also bought Goldfish crackers in bulk, too. Did you know WinCo sells those in bulk?

I knew it was about time to wrap up our trip when my three year old daughter exclaimed loudly down a crowded WinCo shopping aisle, “ewwww!! Someone farted Mommy!” (Here’s a hint: it wasn’t me.) Shopping with a wee one is AWESOME for moments like these. You should try it.

Menu Plan

Some of you have been asking what I’ve been eating lately. I did enjoy a few eggs last week, but still haven’t gone back to eating dairy or meat since my vegan challenge in February. I suppose I’m having too much fun exploring everything veganism has to offer! My daughter isn’t much of a meat fan to begin with, but my kids are still eating dairy including yogurt, eggs, and some milk (though they aren’t huge milk fans, either).

Arugula-Pesto Pizza (I’ll be making cheese & pepperoni for the kids)

Roasted Vegetable Sandwiches (I’ll be making up a recipe for this – maybe top with some of the pesto from the pizza above)

Vegan Lasagna, recipe from this cookbook

Vegan Enchiladas, recipe from this cookbook

I’ll fill in with leftovers, quinoa, and the like

In case you’re wondering about all the greens this week, well – Terry and I finally got our Vitamix! It took some saving and planning (they are NOT cheap), but I do see it as a good investment in our health and well-being. We plan to incorporate juicing into our ever-growing healthful diet. Terry actually created a smoothie this morning that I’ll be sharing here on the blog tomorrow. Come back tomorrow to see what he came up with!

Today is the last day of June, so I thought I’d share how I did this month (click to see larger image):

Last week, I was well under budget, so you know what I did?

Yeah, sort of insane. I get that. But I also really, really love just shopping at Whole Foods. We ended up buying some totally fancy olive oil and balsamic vinegar, good quality Greek yogurt (we adore Noosa), a jar of roasted red peppers, and other specialty type items. Could we have done without this trip? Probably. But it’s also fun knowing that you can sometime sneak a totally fun, splurge trip in like this without killing your budget if you’ve saved on other items all month long. I also found it a good environment to shop in while on a diet!

Even with this trip, I saved nearly half this month. Not bad!

I also managed to lose a total of 13 pounds during the month of June, doing the 17 Day Diet. Most of that weight fell rapidly off in the first week – week and a half. Now, it’s all about digging in and persisting. I am also upping the intensity of my workouts. I’m feeling pretty fantastic and my clothes aren’t so tight!

Here are some of the meals I enjoyed last week. All recipes are my own. I’m not using any sort of cookbook.

Irish Oatmeal with Goji Berries

I hope that this was useful to see that it is possible to eat whole, healthy foods on a budget! Here are some basic recaps of how I was able to achieve this savings:

  • My garden. I estimate I harvested a good $25 worth of organic produce from my garden. I’m out now out there everyday pulling up arugula, lettuce, strawberries, and peas. More will be ready in a couple weeks.
  • I shopped a variety of stores. I wasn’t loyal to just one store. You’ll noticed I hit up an Asian market, the Farmer’s market, Albertsons, and drugstores this month.
  • I leveraged promotions. The $20 Gift Card promotion was huge in helping my family save on items like salmon and children’s vitamins!
  • I made meals that overlapped ingredients. The one jar of roasted red peppers I bought at Whole Foods was used in about 4 different dishes, for instance. Select ingredients that have versatility.

I hope it’s been useful for me to show you what I’ve been spending and saving this month on my family’s grocery and household items. It’s been a useful exercise for me, quite frankly, to see if this can be done while on a healthful diet. Here is how my month is shaping up:

This section tells me that I bought $488 worth of food and household items for a total of $223, a savings rate of 54%. I had set the budget to $350 for this month, so this leaves me $126 for the rest of June. Which is completely do-able. I anticipate I will come under that.

Here are my transactions for the week:

Most of this was spent on produce. Tacoma Boys may have had some savings that I didn’t reflect, too. I bought large containers of blueberries for $2.50 and organic grapes for $2.99/lb.

As a reminder, my husband and I are on the 17 Day Diet, which mostly involves eating lean protein, lots of vegetables, servings of probiotics (kefir, greek yogurt), some fruit, lots of water, and green tea. Here are a few of the meals I ate this week.

In my update from last week, I had spent $126 and saved 10%.

Ready to see how I’m doing month-to-date?

That’s right! I spent a total of $52.12 this week, and my month-to-date savings rate is now over 56%! This was largely achieved by the Albertsons Gift Card promotion I shared with you. I also thought I’d mention I’ve decided to track how much I estimate my garden will save me this year. Yesterday I clipped a huge bunch of organic wild lettuce mix. That would have easily cost me $5 or more at the Farmer’s Market.

And what exactly, did I buy with the $120 I earned from Albertsons?


Not pictured: 2 lbs more of the salmon, plus 2 candy bars for the kids. After Catalinas, I paid a little more than $15 out of pocket on these transactions, mostly just filling in a few things we needed. I know, I know…the amount of transactions and shopping days was insane. I get that. And I can’t recall the last time I have ever shopped so much in a week, and I sincerely hope I can get by the next week or so with only doing minimal shopping. Plus, my fridge is stuffed

I could have bought the cheapest items possible and really stretched the Catalinas. But in the end, hubby and I decided the best bet? Would be to use the Catalinas to buy some of the items for our diet that are harder to save on. Like the McCann’s Irish Oatmeal at $5.99 (which I will be able to eat in T-minus 2 days!), the Organic Kefir, the fresh salmon, and the ground turkey.

Diet Update

I promised I’d also share how I’m doing on my diet. As a reminder, Hubby and I are on the 17 Day Diet. Today is Day 15, and so far I’ve lost 11 pounds! The book suggests one can lose between 10 – 12 pounds on the first 17 day cycle, so I’m convinced at this point.  However, I have been craving bread pudding and cheese enchiladas…and I found myself taking a deep whiff of my son’s Crunch bar today…

Some of you wanted me to share more of what we’ve been eating. So here is a selection of the meals we ate on that $50 we spent last week ($20 of which was organic produce at the Farmer’s Market):

Copper River Salmon, Pico de Gallo on Garden-Picked Wild Lettuce Mix

Turkey Meatballs, Pico de Gallo with Arugula and Lettuce

Copper River Salmon Salad (dressed with lemon juice, cumin & olive oil) with Steamed Asparagus

Fakey-Beef Stroganoff (only it’s ground chicken and there is no cream) on yes, more Lettuce, served with Kale Chips just cuz

If you’re noticing a theme that pretty much any meat gets added on a bed of lettuce, you’ve made a correct observation.

I promised to share what I spend and what I save this month with you. And this is turning out to be a very different month! But in an effort to follow through with what I promised, here goes nothing.

Yup, you read that right. A meager savings rate of 10% and $3 worth of coupons redeemed so far. So what gives, Coupon Project lady?

Enter the Diet

On June 1st, my husband and I decided we both wanted to shed some unwanted pounds and we’re on the 17 Day Diet. The first cycle of 17 days basically consists of eating produce, some dairy, lots of vegetables, and fruit. So that is basically the gist of what I’ve spent our grocery money on so far. Pretty boring, from a savings rate standpoint. But pretty exciting is the fact I dropped 8 pounds last week and my husband dropped 13.

I had debated doing a drugstore trip last week, but ultimately decided against it as I didn’t see anything on sale that we particularly had need of in our stockpile. Why waste the gas?

So does this mean that I won’t use coupons at all this month? Well I’ve actually been doing some research on the foods we can eat, and the foods we’ll soon be able to eat, and have worked to dig up some deals. For instance, I plan on stocking up on inexpensive kefir and low sodium turkey bacon this weekend at Albertsons. I’m also in need of dish detergent and children’s vitamins, so I may be yet working in a drugstore trip or two.

I was chatting with my husband a couple days ago, feeling a bit like a failure for not using lots of coupons to “wow” you all with this past week. But then it occurred to me – woah, no eating out this week! We didn’t eat out – not once. Nor did we stop to pick up a latte at any point. And the money we did spend? Went on items like Alaskan salmon, blueberries, and leafy greens. I suppose I can’t feel too bad about that right?

I thought I’d share some of the meals I enjoyed last week. Please note that we’re working really hard here to eat well, and do so in creative ways. All recipes were my own, just cooking as so inspired.

There were a few deals I wanted to do today. So once my son was in preschool, off my daughter and I went to the stores! In my area, there is an Albertsons, Safeway, Rite Aid, and Walgreens all within a strip mall’s distance, so it works well to go there when I wish to do trips to different stores.

Here’s what I found today:

Safeway:

(5) Betty Crocker Fruit Snacks (more on this deal HERE)
(2) Wonderful Pistachios (on buy one, get one free)
(2) Honey Nut Cheerios (not super cheap, but a decent price since we were out)
(1) Ketchup (because my daughter requires this)
Used a $1/3 and $0.50/2 coupons for the fruit snacks
Used $1 coupon for the pistachios
Used the $1/2 printable coupon for the Cheerioes

Total paid: $11.91, plus earned a $3 Catalina coupon for the fruit snacks.

Albertsons:

(1) Sue Bee Honey $4.99

Used the $1/1 peelie on the honey
Used the $1/1 Nasoya insert coupons
Used three double coupons

Total paid: $4.57

My store was out of the cheap Electrasol, so I left with a raincheck.

Total paid: NOTHING, because I used a gift card I earned, received a $3 UP Reward

(If paying cash, this would’ve worked out to $9.84, or $1.99 each + tax)

Savings Tracker

I decided to enter my receipts into my Savings Tracker, to illustrate how it could work. Of course, how you choose to use it is entirely up to you.


Albertsons and Safeway are pretty straight forward. You’ll notice that I earned a $3 Catalina at Safeway. Because it’s still in my pocket, I’m not accounting for it at all in my savings. However, I did write the note “$3 OYNO” in the far right column to remind myself. When I go to spend it, that will be added as a $3 coupon in the next transaction.

Rite Aid is a bit trickier. Last year I didn’t have the tax column, I didn’t feel it was necessary. But many of you asked for it. Guess what? I still am not convinced. I feel it throws things off and makes things unnecessarily complicated. So I just included the tax in my shelf cost and will personally be leaving my tax column blank this year. Feel free to do the same if you wish. 

Some of you have noted that the tax column isn’t in the Google Docs. I will take a look at that and apologize for the oversight.

Getting back to Rite Aid, the simplest way for me to calculate the shelf cost was by taking the amount I paid with my gift card ($9.82). adding the wellness savings of $19.98 (noted on my receipt), and the total coupons I used ($12). That gave me a total of $41.80. Again, I’ve decided for my personal use I don’t care about tax. I’m just including it in my shelf total. For coupons, I added $12 for the manufacturer’s coupons, and also the $9.82 in gift card money I used. The gift card was issued to me when my UP Rewards didn’t print last week.

Bottom line: Register Rewards, Catalina coupons, gift cards, etc. I add to the “coupons” total when I redeem them. This is what makes sense to my brain.

So far this month? I have a savings rate of 80.95% and still have $283.52 left in my $300/month budget. Not bad!
