In the past several months, we’ve noticed that my son does better if he doesn’t consume much dairy. For the most part, this hasn’t been a huge issue as he’s not much of a fan of cheese. However, when it comes to ice cream and milkshakes, it’s a real bummer for him! As you know, this time of year a very popular fast food chain likes to make a “Shamrock Milkshake.”
I wondered if I could make my own dairy-free version for him at home. I’m happy to say, it was a total success. This is also an extremely easy recipe that only requires two ingredients:
Here’s what you’ll need:
- 1 – 1 1/4 cup Dairy-free Mint Chip frozen dessert (I hesitate to say “ice cream” since it’s dairy free!)
- 3/4 – 1 cup Non-dairy milk of your choice
My Fred Meyer store carried the So Delicious brand, which *is* pretty delicious! We also had unsweetened almond milk on hand, so we opted for that.
Start by scooping some of the dairy free ice cream into your blender. To fill up the mason jar mug pictured in this post, I ended up using about 1 1/4 cups.
Next, add your dairy-free milk. I found that about 1/4 cup less of the milk than ice cream yielded a good thickness, so I ended up using 1 cup. Of course, you can tweak this as you blend it. Give it a few seconds in the blender, but don’t let it go too long or too high of a speed. You do want some thickness here!
Voila! All done.
Of course, it’s always tastier when served in a fun mug with a straw! My son said that this was awesome and was excited to enjoy an old treat, with a new twist.
