I’ve been having an absolute BLAST with my Going on a Vegan challenge this month. I have another post coming tomorrow with a month to-date shopping and eating post.

But today I wanted to share something I’ve learned to do this month that I think ANYONE could take advantage of – vegan or not. Making your own broth! I picked up a wonderful vegan cookbook from my library I want to share – it’s called Fresh from the Vegetarian Slow Cooker, and it pretty much ROCKS. What’s not to love about healthy food made easy in a slow cooker?

I made two different broths this week, but I’ll start with the most budget-friendly one. It’s also supremely simple to make.

Cut two carrots, one celery, quarter two onions, and squash two garlic (but leave in the peels). The recipe also calls for the peelings from two well-scrubbed potatoes. I didn’t have potatoes, but my broth came out just fine. I did throw in some parsnips I still had from my garden just to use them up. I imagine you could add in other vegetables you might have on hand as well.

Then, to the bottom of your slow cooker add a small drizzle of olive oil. Add your veggies in on top and then add 8 cups of water. Season with plenty of black pepper, parsley (I used dried as I didn’t have fresh), a bay leaf, a little salt, and a little tamari or other soy sauce.

Let simmer for 8-10 on low.

After this, you’re going to put the vegetables through a sieve and press the back of them with a spoon so you can squeeze as much wonderful moisture out as you can.

This yielded me roughly 8 cups of vegetable broth. You can then use it right away, store it in the fridge for up to 5 days, or freeze it in portions that make sense for you!

Not only is this a nutritious option for your home cooked meals, it’s incredibly frugal. My stock-up price for a can of chicken broth is $0.50. One can has about 2 cups of broth in it, so 4 cans at $2 would yield me 8 cups. I bet I spent less than that for the vegetables and ingredients for my vegetable broth! And in case you’re wondering, yes, it is incredibly flavorful.

I also tried another recipe for roasted vegetable broth from the same cookbook.

The idea here is that you roast your veggies (including celery, carrots, onions, parsnips, and garlic) for 40 minutes prior to placing in the slow cooker. This yields a sweeter and richer tasting broth. You’re going to spend a bit more time and money on this broth, but it would be nice for your extra-special recipes.

I also added a few dried porcini mushrooms, soaked in hot water to soften. The process otherwise is the same. Allow to cook for 8-10 hours. The color will turn a deep golden.

This was also very delicious, but at $4.99 for a small bag of mushrooms, not incredibly frugal.

I’ve been having so much fun in the kitchen and I can’t wait to share more of my adventures with you in a post coming tomorrow. I’ve learned a few things and had a couple epiphanies. As a bonus, I’ve also lost a little weight. Stay tuned!

Incidentally, here’s how my sink looks most days now after a home-cooked meal:

I’ve even gotten my kids to try a few of my creations! Last night, I took some of that broth and turned it into a beautiful butternut squash and lentil soup. My son lapped the bowl down before I knew it!
It’s never too soon to help your kids make good choices about food!

One thing I think I will take away from this month is to start my week by making a big batch of this healthful broth to last for the week’s worth of meals.
