I recently shared a Groupon offer with you: spend $17 and get a standard size box of organic produce (worth $35) from Full Circle Farm delivered to your door. I decided to nab this one myself and see what it was all about.
It was extremely easy to set up an account and redeem my Groupon. I was also able to see what was coming in my shipment and make any changes. I decided to swap green beans for kale. Yesterday morning, my box arrived!
Overall I was really pleased with the variety and quality of produce I received! It was fun opening up my box, taking everything out, and putting it away.
I was so inspired, I decided to create a recipe that combined this delicious food. I took inspiration from this Allrecipes.com recipe.
Quinoa with Vegetables and Chard
1 cup quinoa
2 1/2 cups water original recipe calls for three)
3 cloves garlic, crushed
2-3 shallots, chopped
3 carrots, peeled & chopped (I used rainbow carrots)
1 cup cremini mushrooms, chopped
3-4 leaves Swiss Chard, cut into large pieces, stem removed
1/2 teaspoon cumin
1 teaspoon oregano
salt and ground pepper, to taste
Start by cooking the quinoa. I found this in the bulk bin section of my Whole Foods Market recently. I’ve never cooked with it before last night!
While that is cooking, heat the olive oil in a pan and sautee the garlic until fragrant, about two minutes. Add the carrots and shallots. I used the beautiful rainbow carrots!
After a couple minutes, I added the mushrooms. Then I added the cumin and oregano and stirred a couple more minutes. By this point, the quinoa was cooked. So I added that into the pan. Finally, I added the chard leaves. I folded them into the pan and let them wilt down a bit. It just took a few minutes tops.

This recipe could be modified to use whatever vegetables you have on hand: peppers, celery, peas, beans, and kale could be other options.
