More thoughts on the Coconut Oil…

I have almost worked my way through one of those tubs of coconut oil. I really can’t say enough good things about this product. I love that it’s shelf stable (so no refrigeration) and you can use it in the place of butter or shortening in many recipes.

Just today, I modified an applesauce cake recipe from an old Betty Crocker cookbook. Check it out:

All I did was mix together: 1 1/4 cup flour, 1 cup sugar, 3/4 tsp baking soda, 3/4 tsp salt, pinch baking powder, 1/2 tsp cinnamon, 1/4 tsp ground cloves, 1/4 tsp allspice, 3/4 cup applesauce, 1/4 cup water, 1/4 cup Nutiva Coconut Oil, 1 egg.

Mix well and pour into greased cake pan. I chose a round one. It’s what was clean. My cake was done in about 30 minutes at a 350 degree oven.

I then made an uber simple glaze by taking powdered sugar (about 2 cups, perhaps?) and a touch of milk (maybe 2-4 tablespoons) and mixing together. Just add a TINY bit of milk and stir until you have the consistency you want. I added a touch of almond extract (maybe 1/4 tsp), but you could use vanilla or another flavor, if you prefer. Viola!

    Question about the Goji berries – have you ordered them? Is it two 16 oz bags or just one? Amazon makes it sound like one 16 oz bag but your price looks like two bags. I’d love it if it was two bags!!!

      You know, I did get two bags when I did this deal. But when I double checked the link, yes it does look like one bag. However, I am pretty sure that the bags I received were 8 oz, and this is one 16 oz bag.

        that makes sense – I see that on amazon they have the option for two 8 oz bags or one 16 oz bag. Still a great deal for Organic Goji Berries!

    I’ve been lurking for a while (about a year now?) and am so excited about the organic segment I finally signed up for Full Circle. I hope you get your credit (and hope you don’t mind I went digging around your site looking for your full name so I could refer you:) Anything like “from scratch” cooking is of interest to me. Also homemade or like homemade cleaners and remedies.

    The cherry on top of your site, at least for me, is your dedication to ethical couponing. Thank you for that and of course for all the savings!
